ROASTED CHICKEN EASY RECIPE

I love this recipe for baked chicken with potatoes and onion . Like all the chicken recipes that we prepare in Homemade and Easy Cooking , this preparation is very easy to do and does not require much effort. But without a doubt, the best of all is how good it looks. For this I am going to teach you some tricks so that the meat does not remain dry when serving this dish. In addition, what we are going to do is cook this bird with its garnish, all at the same time, causing its own juices to mix with this garnish, obtaining a spectacular recipe. To prepare a delicious baked chicken with potatoes and onion, you will need the following ingredients:-



Ingredients for 4 people:

4 full thighs (hindquarters) or 1 whole chicken 

4 medium potatoes

4 medium onions

olive oil

salt and pepper

HOW TO MAKE A BAKED CHICKEN WITH POTATOES AND ONION

1.- We start by peeling the potatoes.  After peeling the potato, cut it into thin slices, no more than 1 centimeter thick. Then place them on the baking sheet as a base. Peel the onion and cut it into thin strips. Place it on top of the potato.


2.- Now place the thighs on top of the onions and potatoes. We add a glass of water and a splash of olive oil to everything. This will make it juicier while baking. We make sure that there is always moisture at the bottom. This way the garnish is not going to burn. Season and add a good pinch of dried thyme to each thigh (or to the whole chicken, if you have chosen the complete piece)


3.- Place the chicken in the oven at 220ºC. If you are using thighs. Heat up and down. Let it bake for about 30 minutes, until it is golden brown. If you use a whole chicken, we bake at 190ºC.

4.- When it is well browned, we remove the tray from the oven, we turn the pieces over. This will cook the other side.


5.-Put the tray back in the oven, immediately after. Finally we let it cook for approximately the same time, until everything is well cooked.


Chicken oven with potatoes and onions ready! As a result of putting the garnish at the bottom, we will take advantage of the juices that the chicken releases during baking. These will mix with the garnish and we will have an explosive mixture of flavors.

TIPS FOR GETTING A JUICY CHICKEN WITH CRISPY SKIN IN THE OVEN

On occasions, many of you have told me that, when you try to prepare this baked chicken, the meat is dry and you do not know why this could have happened, since you have followed the steps that I have given you previously. Next I am going to give you some tips so that you can get a juicy chicken with its crispy skin in the oven.



To avoid that the chicken is very dry, it is advisable that you paint it with oil or water just before putting it in the oven, in this way, the chicken will retain more moisture and we will get a juicier meat. We can also achieve this effect if we paint it with lemon juice or brandy.


Another trick that never fails is to introduce inside the chicken, a couple of lemons cut into pieces . In this way, while the chicken is baking, the lemon juices are distributed throughout its meat and in this way we will obtain a juicier meat with a delicious critical flavor.


The secret to crisp skin is in seasoning it . You all know that the essential ingredients in my kitchen are salt and pepper. Well, these two ingredients are essential for us to get a baked chicken with juicy meat and a crispy skin. To do this, when seasoning the chicken, you not only have to do it on the outside, but also on the inside. In this way, during baking, the dressing will be distributed throughout the meat and thus you will achieve juiciness inside and a seal of the skin so that it is crisp.


A good trick is to preheat the oven with a large casserole or tray inside . When we put the chicken in the oven, we will put it inside the tray and it will act as a "griddle". We let the chicken cook for about 15 minutes on each side and in this way we will ensure that the juices are distributed throughout the meat of this bird.


The resting time after baking is also very important. When you remove the tray from the oven, let it rest for about 10 minutes before carving it so the chicken juices will settle better.
